Healthy Chicken Parmesan in the Instant Pot

 Easy Instant Pot Chicken Parmesan: A Healthier Twist


Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 cup marinara sauce (no sugar added)
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • Fresh basil leaves (for garnish)

Instructions:

  1. Prepare the Chicken:

    • Pat the chicken breasts dry with paper towels.
    • Slice each chicken breast in half horizontally to create four thinner cutlets.
  2. Prepare the Breading:

    • In a shallow bowl, mix the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
    • In another shallow bowl, beat the egg.
  3. Bread the Chicken:

    • Dip each chicken cutlet into the beaten egg, allowing any excess to drip off.
    • Coat the chicken cutlets in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to ensure they stick.
  4. Sauté the Chicken:

    • Set the Instant Pot to the 'Sauté' function and add the olive oil.
    • Once the oil is hot, add the breaded chicken cutlets in a single layer. Sauté for 2-3 minutes on each side until they are golden brown. You may need to do this in batches to avoid overcrowding the pot.
  5. Pressure Cook:

    • Turn off the 'Sauté' function and remove the chicken from the Instant Pot.
    • Add 1 cup of water to the pot to prevent burning.
    • Place the trivet in the Instant Pot and arrange the browned chicken cutlets on the trivet.
    • Pour the marinara sauce over the chicken.
  6. Cook:

    • Lock the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high pressure for 5 minutes.
    • Once the cooking time is complete, do a quick release of the pressure.
  7. Add Cheese:

    • Carefully remove the lid and sprinkle the shredded mozzarella cheese over the chicken cutlets.
    • Place the lid back on the Instant Pot for 2-3 minutes (without sealing) to allow the cheese to melt

  8. Serve:

    • Use tongs to remove the chicken cutlets from the Instant Pot.
    • Garnish with fresh basil leaves.
    • Serve with a side of whole wheat pasta or a green salad for a complete meal.
