  • Pasta:

    • 12 oz (340 g) pasta (penne, fusilli, or spaghetti work well)

    • 1 medium zucchini, diced
    • 1 medium yellow squash, diced
    • 1 red bell pepper, diced
    • 1 yellow bell pepper, diced
    • 1 cup cherry tomatoes, halved
    • 1 cup broccoli florets
    • 1 medium carrot, thinly sliced
    • 3 cloves garlic, minced
    • 1 small red onion, thinly sliced

  • Other:

    • 2 tablespoons olive oil
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • Salt and pepper to taste
    • 1/4 teaspoon red pepper flakes (optional)
    • 1/4 cup grated Parmesan cheese (optional)
    • Fresh basil or parsley for garnish

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.
    • Add the pasta and cook according to package instructions until al dente.
    • Drain the pasta, reserving about 1/2 cup of the pasta water. Set aside.
  2. Prepare the Vegetables:

    • While the pasta is cooking, heat the olive oil in a large skillet over medium heat.

    • Stir in the cherry tomatoes and cook for another 2 minutes.
