Easy Instant Pot Chicken Parmesan: A Healthier Twist
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup whole wheat breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1 cup marinara sauce (no sugar added)
- 1 cup shredded mozzarella cheese
- 1 tablespoon olive oil
- Fresh basil leaves (for garnish)
Instructions:
- Pat the chicken breasts dry with paper towels.
- Slice each chicken breast in half horizontally to create four thinner cutlets.
Prepare the Breading:
- In a shallow bowl, mix the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
- In another shallow bowl, beat the egg.
Bread the Chicken:
- Dip each chicken cutlet into the beaten egg, allowing any excess to drip off.
- Coat the chicken cutlets in the breadcrumb mixture, pressing the breadcrumbs onto the chicken to ensure they stick.
Sauté the Chicken:
- Set the Instant Pot to the 'Sauté' function and add the olive oil.
- Once the oil is hot, add the breaded chicken cutlets in a single layer. Sauté for 2-3 minutes on each side until they are golden brown. You may need to do this in batches to avoid overcrowding the pot.
Pressure Cook:
- Turn off the 'Sauté' function and remove the chicken from the Instant Pot.
- Add 1 cup of water to the pot to prevent burning.
- Place the trivet in the Instant Pot and arrange the browned chicken cutlets on the trivet.
- Pour the marinara sauce over the chicken.
Cook:
- Lock the lid and set the Instant Pot to 'Manual' or 'Pressure Cook' on high pressure for 5 minutes.
- Once the cooking time is complete, do a quick release of the pressure.
Add Cheese:
- Carefully remove the lid and sprinkle the shredded mozzarella cheese over the chicken cutlets.
- Place the lid back on the Instant Pot for 2-3 minutes (without sealing) to allow the cheese to melt
