Sweet Potato & Peanut Curry Recipe
Ingredient
For the Curry 2 large sweet potatoes, peeled and cubed 1 large onion, finely chopped 3 garlic cloves, minced 1 tablespoon fresh ginger, grated 1 bell pepper, chopped (any color) 1 can (14 oz) coconut milk 1 cup vegetable broth 1/2 cup creamy peanut butter 2 tablespoons curry powder 1 teaspoon ground turmeric 1 teaspoon ground cumin 1 teaspoon paprika 1/2 teaspoon chili powder (adjust to taste) 1 tablespoon olive oil (or any cooking oil) Salt and pepper, to taste Fresh cilantro (for garnish)
Cooked rice or quinoa Lime wedges (optional) Chopped peanuts (optional)
Peel and cube the sweet potatoes. Finely chop the onion and bell pepper. Mince the garlic and grate the ginger.
Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
3. Cook the Vegetables
Add the chopped bell pepper to the pot and cook for 3-4 minutes. Stir in the curry powder, turmeric, cumin, paprika, and chili powder. Cook for 1 minute to toast the spices.
Add the cubed sweet potatoes to the pot, stirring to coat with the spices. Pour in the coconut milk and vegetable broth. Stir well. Bring the mixture to a boil, then reduce the heat to a simmer.
Cover the pot and let the curry simmer for 20-25 minutes, or until the sweet potatoes are tender. Stir occasionally to prevent sticking. If the curry is too thick, add a little more vegetable broth or water.
Stir in the creamy peanut butter until fully combined. Season with salt and pepper to taste. Adjust the spiciness if needed.
Serve the curry over cooked rice or quinoa. Garnish with fresh cilantro and chopped peanuts, if desired. Optionally, add a squeeze of lime juice for a tangy touch.
Tips
For a thicker curry, let it simmer uncovered for a few extra minutes. For added crunch, top with toasted coconut flakes or additional chopped peanuts. To make it spicier, increase the amount of chili powder or add a pinch of cayenne pepper. Enjoy your Sweet Potato & Peanut Curry!
